What is "Extra Virgin"?
Extra Virgin Olive Oil is the oil rendered from the very first pressing of the olives. "Virgin" olive oil is the process of running the same olives through the mill a second time, which renders the same great quality olive oil.
Can I cook with olive oil?
Yes, absolutely you can, in sauté, roast, use in marinades. Keep in mind that the flashpoint is somewhere between 375f and 400f degrees. If it begins to smoke take it off the heat immediately!
Is it okay to keep olive oil in the refrigerator?
Yes, and can be used immediately, or brought to room temperature before using it. It will look cloudy, which does not impact the quality or the flavor.
How long does olive oil last?
Please check the use-by date on the bottle. It should not be more than 2 years from date of harvest. Olive oil can last up to two years if kept in a cool, dark place. Once opened, flavor can remain for up to six months. Hopefully, you will use it before then!
What do I look for if I buy olive oil in the grocery store?
It's always a good idea to locate a "use by" date, two years out is the acceptable date you should look for, and where the olive oil comes from. If it is California grown, you are fairly safe in the quality of the oil, as the State of California has established standards for the production of olive oil. If you decide on an imported olive oil, it is a good idea that you are familiar with the grower/producer. Please read "Slippery Business" by Tom Mueller, published in the New Yorker Magazine in 2007.
